Aubergine, also known as brinjal, eggplant or baingan in Hindi is a gorgeous, purple-colored  vegetable with a smooth and shiny surface. If you've ever lived in India, then you'll probably associate this vegetable with a horrid, burning smell. It's the smell of brinjals being roasted on high flame and one we grew up with. The vegetable's charred-black skin sticks to your fingers when you take it off but the gleaming, creamy brinjal that comes through is a real delight.
